Hearty blackberry cobbler with wholesome whole wheat flour for a twist on the classic recipe.
Ingredients:
  • 2 cups fresh blackberries
  • 1 cup warm water
  • 2 tablespoons cornstarch
  • 1 cup whole wheat flour
  • 0.33333334326744 cup white sugar
  • 0.25 cup butter, cut into small chunks
  • 0.5 cup milk, or more as needed
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and lightly grease an 8-inch square or round baking dish.
  • In a saucepan, mix blackberries with 1 cup of sugar. In a separate bowl, whisk warm water with cornstarch until smooth; add to the blackberries. Bring to a boil, then simmer on medium heat, stirring occasionally, until the mixture thickens and the berries break down, about 5 to 10 minutes.
  • Combine flour, 1/3 cup sugar, baking powder, and salt, then whisk together. Incorporate butter into the mixture using a pastry cutter or your hands until it resembles coarse crumbs. Add milk and mix until a smooth, thick batter forms.
  • Spread the berry mixture evenly in the baking dish, then dollop spoonfuls of batter on top.
  • Bake in the oven until a golden crust forms, about 30-40 minutes.
