Whip up a zesty shrimp and scallop ceviche - a simple dish where citrus marinade "cooks" the shellfish for a refreshing appetizer or main course.
Ingredients:
4pounds shrimp
1poundscallops
6 large limes, juiced
1 large lemon, juiced
1 small white onion, chopped
1cucumber, peeled and chopped
1 large tomato, coarsely chopped
1serrano pepper, chopped
1bunchcilantro
1tablespoonolive oil
1tablespoonkosher salt
groundblack pepper to taste
Instructions:
Combine shrimp, scallops, lime juice, lemon juice, onion, cucumber, tomato, jalapeño, serrano, cilantro, olive oil, salt, and pepper in a large glass or ceramic bowl. Refrigerate and let marinate until shrimp and scallops are opaque, approximately 1 hour.
