Egg-free, flavorful falafel served on pitas with creamy tzatziki or tahini, topped with fresh lettuce and tomato.
Ingredients:
  • 1 (19 ounce) can garbanzo beans, rinsed and drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 tablespoons chopped fresh cilantro
  • 1 teaspoon dried parsley
  • 2 teaspoons ground cumin
  • 0.125 teaspoon ground turmeric
  • 0.5 teaspoon baking powder
  • 1 cup fine dry bread crumbs
  • 0.75 teaspoon salt
  • 0.25 teaspoon cracked black peppercorns
  • 1 quart vegetable oil for frying
Instructions:
  • Combine the garbanzo beans in a large bowl, along with the onion, garlic, cilantro, parsley, cumin, turmeric, baking powder, bread crumbs, salt, and pepper. Embrace your hands to mix it thoroughly. Form the mixture into 1 1/2 inch balls, aiming for 18 to 24. If the mixture is too dry, gently incorporate a splash of water until it holds together well.
  • Prepare a deep fryer by heating the oil to 375 degrees F (190 degrees C). Gently place the balls into the oil and fry until golden brown. If you don't have a deep fryer, use a heavy deep skillet over medium-high heat. Adjust the heat as needed and rotate the falafels for even browning.
