Irresistible Jeff Davis Pie, a decadent twist on classic pecan pie with bourbon whipped cream topping.
Ingredients:
  • 1 cup butter, softened
  • 1 cup packed light brown sugar
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • 2 unbaked pie shells
  • 3 tablespoons white sugar
  • 2 tablespoons bourbon whiskey
Instructions:
  • Heat the oven to 425°F (220°C).
  • Combine white sugar, brown sugar, and flour in a large bowl. Add softened butter, 1 cup heavy cream, eggs, and vanilla; mix until thoroughly combined. Divide mixture evenly into 2 unbaked pie shells.
  • Bake in a preheated oven at high heat for 10 minutes, then lower the temperature to 350 degrees F (175 degrees C) and bake until the center is set, about 45 to 50 minutes.
  • In a mixing bowl, whip 1 cup of heavy cream until stiff peaks form while gradually adding sugar. Gently fold in bourbon, then serve pie slices with dollops of whipped cream on top.
