Spicy chorizo pasta with creamy sauce.
Ingredients:
  • 5 (4 ounce) links chorizo sausage (such as Johnsonville®)
  • 1 (16 ounce) box penne pasta
  • 1 cup butter
  • 4 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 0.25 teaspoon crushed red pepper flakes
  • 1 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 (8 ounce) package button mushrooms, stems trimmed
  • salt and pepper to taste
Instructions:
  • Prepare your outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Grill sausages until fully cooked through, about 10 minutes, turning occasionally until no longer pink in the center. Confirm doneness with a thermometer, ensuring it reads 160°F (70°C). Chop sausages into bite-sized pieces and set aside.
  • 1. Bring a large pot of lightly salted water to a vigorous boil. Add penne and cook until al dente, about 11 minutes. Drain and set aside.
  • In a saucepan over medium heat, elegantly melt 1 cup of butter until it glistens. Sautee the garlic in the fragrant melted butter for about 5 minutes until soft. Add cream and a pinch of red pepper flakes, then bring to a gentle simmer. Gradually sprinkle in Parmesan cheese while stirring gracefully until all melts together beautifully. Keep the sauce warm over low heat, giving it a loving stir every now and then to maintain its silky texture.
  • In a large skillet over medium-high heat, melt the remaining 1 tablespoon butter. Add onion, red bell pepper, and mushrooms; sauté until tender. Season with salt and pepper. Add chorizo and heat through. Mix in cooked penne and Parmesan cream sauce before serving.
