Savory blend of Italian sausage, beef, sweet spices, peppers, and dark beer creates an exceptional and unique chili experience.
Ingredients:
  • 1 pound hot or sweet Italian sausage
  • 0.5 onion, chopped
  • 1.5 pounds beef stew meat, cut into 1/2 inch pieces
  • 1 (28 ounce) can diced tomatoes
  • 1 (12 fluid ounce) bottle dark beer
  • 0.25 cup chili powder, or to taste
  • 0.25 teaspoon red pepper
  • 0.25 teaspoon white pepper
  • 0.5 teaspoon ground cinnamon
  • salt and black pepper to taste
  • 3 tablespoons tomato paste
  • 1 (15 ounce) can kidney beans, rinsed and drained
Instructions:
  • In a large skillet over medium heat, cook and stir the sausage until browned. Drain the sausage and transfer it to a large pot. In the same skillet, cook and stir the onion and ground beef over medium heat until the beef is browned and the onions are tender. Drain the mixture and add it to the pot with the sausage.
  • Brown the stew beef in the skillet over medium heat. Transfer the beef to the large pot without draining the juices.
  • Combine tomatoes, beer, and water in the pot with the meats. Mix in chili powder, red pepper, white pepper, sugar, and cinnamon. Season with salt and black pepper to taste. Cook on low heat until beef is very tender, at least 2 hours, stirring occasionally and adding more water if necessary. For a thicker chili, stir in tomato paste as needed. If using kidney beans, add them 10 minutes before serving to warm through.
