Exciting Dijon and zesty lemon elevate this must-try dish, perfectly balanced with watercress. Pair with wheat bread, avocado, or enjoy solo.
Ingredients:
  • 6 eggs
  • 0.25 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon prepared yellow mustard
  • 0.5 lemon, juiced
  • 0.25 cup chopped green onions
Instructions:
  • Place an egg in a saucepan, cover it with cold water, and bring the water to a boil. Remove from heat and let the egg stand in hot water for 10 to 12 minutes. Then, cool, peel, and for quicker cooling, transfer the egg to an ice bath.
  • Mix mayonnaise, Dijon mustard, yellow mustard, lemon juice, and green onions in a medium bowl. Gently fold in large chunks of chopped eggs. Season with salt and pepper.
