Irresistible pumpkin pie with rich maple syrup and creamy perfection.
Ingredients:
  • 1 (3 pound) sugar pumpkin, cut in half
  • 1 pie dough for a single-crust pie
  • 1 egg white
  • 1 tablespoon water
  • 1 cup heavy whipping cream
  • 3 eggs, room temperature
  • 0.5 cup packed brown sugar
  • 0.25 cup maple syrup
  • 4 teaspoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 0.75 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 pinch ground cloves
  • 1 pinch salt
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and line a baking sheet with parchment paper for easy cleanup.
  • Place the pumpkin halves, with the cut side facing down, on the baking sheet.
  • Roast the pumpkin in a preheated oven until tender for approximately 1 hour. Allow it to cool for at least 15 minutes. Remove and discard the seeds, then blend the pumpkin flesh in a food processor until smooth. Lower the oven temperature to 375°F (190°C).
  • Once the pumpkin is roasting, roll out the pie dough to fit a 9-inch pie dish, crimp the edges to form a border, and refrigerate the dough until chilled, at least 45 minutes.
  • Place 2 sheets of aluminum foil over the chilled pie dough, then add pie weights to blind bake.
  • Bake in the preheated oven for about 25 minutes until the crust is set on the sides and lightly golden on the edges. Remove aluminum foil with pie weights. Whisk egg white and water in a small bowl, then brush the pie crust border with the mixture. Return to the oven and bake for an additional 10 minutes until the bottom of the pie is dry and set. Remove the crust from the oven and reduce the temperature to 325 degrees F (165 degrees C).
  • In a mixing bowl, combine 2 cups of pumpkin puree with cream, eggs, brown sugar, maple syrup, flour, vanilla, cinnamon, nutmeg, cloves, and salt. Whisk until the mixture is smooth. Pour the pumpkin mixture into a baked pie crust.
  • Bake pie in the preheated oven for 50 minutes until the center is just set.
