Mexican 9-layer salad: A colorful, satisfying dish perfect for a light meal or BBQ potluck, best enjoyed with crispy tortilla chips.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1.5 tablespoons chopped fresh cilantro
  • 4 slices lean bacon, chopped
  • 1 (16 ounce) can refried beans
  • 1 teaspoon taco seasoning mix
  • 1 cup sour cream
  • 0.75 cup shredded Cheddar cheese
  • 1 cup prepared guacamole
  • 1 cup diced tomatoes
  • 2 tablespoons sliced black olives
  • 2 tablespoons finely sliced green onions
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • In a skillet over medium heat, pan-fry the chicken breasts, 1 1/2 tablespoons of cilantro, and vegetable oil until golden brown, fully cooked, and the juices run clear, about 5 minutes per side. Set aside to cool and then cut into cubes.
  • Cook the bacon in the skillet over medium-high heat until evenly browned, stirring often for about 10 minutes. Add refried beans to the bacon and cook until hot and bubbling, stirring frequently for 5 to 10 minutes. Combine taco seasoning and sour cream in a bowl.
  • Spread hot bean and bacon mixture in an 8x8-inch glass dish. Add chicken cubes, then layer with 3/4 cup Cheddar cheese, guacamole, sour cream mixture, and sliced tomatoes. Sprinkle with 1 1/2 tablespoons cilantro, black olives, green onions, and 1/4 cup shredded cheddar cheese on top.
