"Jennifer Aniston-inspired salad with whole grains, nuts, fresh herbs, lemon, and creamy feta - healthy and satisfying."
Ingredients:
  • 170g (1 cup) burghul (fine cracked wheat)
  • 375ml (1 1/2 cups) boiling water
  • 1 large Lebanese cucumber, finely chopped
  • 1/2 large red onion, finely chopped
  • 400g can chickpeas, rinsed, drained
  • 150g feta, finely crumbled
  • 125.00 ml chopped fresh continental parsley leaves
  • 62.50 ml chopped fresh mint leaves
  • 55g (1/3 cup) pistachio kernels, coarsely chopped
  • Lemon wedges, to serve (optional)
Instructions:
  • In a heatproof bowl, pour boiling water over the burghul and let it soak for 15 minutes. Fluff the grains with a fork before using.
  • Combine cucumber, onion, chickpeas, feta, parsley, mint, and pistachios with burghul, toss well. Drizzle with lemon juice and oil, season, toss again. Serve with extra lemon wedges, if desired.
