Protein-packed macaroni salad with veggies and creamy yogurt dressing, perfect for hosting.
Ingredients:
  • 16 ounces multigrain elbow macaroni (such as Barilla ProteinPLUS®)
  • 1 cup plain yogurt
  • 0.75 cup extra-virgin olive oil
  • 0.5 cup red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon minced garlic
  • 1 teaspoon dried dill weed
  • 0.5 head broccoli florets, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium onion, chopped
  • 1 cup snap peas
  • 1 cup fresh mushrooms, chopped
  • 1 cup baby carrots, chopped
Instructions:
  • 1. Boil generously salted water in a large pot. Add elbow macaroni and cook until al dente, about 8 minutes. Drain, rinse with cold water, and chill in the fridge for 30 minutes.
  • Combine yogurt, oil, red wine vinegar, oregano, garlic, dill, salt, and pepper in a bowl and whisk until well blended.
  • Combine broccoli, bell peppers, onion, snap peas, mushrooms, and carrots with the dressing in the chilled pasta; toss until evenly coated.
