Jerk Chicken and Pineapple Foil Packs

Grilled chicken infused with vibrant jerk seasoning and coconut rum for a bold and flavorful meal.
Ingredients:
  • 1 lb boneless chicken thighs or breasts
  • 3 tablespoons jerk seasoning
  • 1/2 medium pineapple, cut into triangles
  • 2 tablespoons coconut rum or rum, if desired
  • Chopped fresh cilantro and lime wedges, as desired
Instructions:
  • Preheat your gas or charcoal grill.
  • Lay a large sheet of heavy-duty foil or double layer of regular foil on your work surface and gently rub it with a touch of olive oil.
  • Lay the chicken in the center of the foil. Drizzle with olive oil and sprinkle with jerk seasoning. Place pineapple wedges around the chicken and pour on the rum.
  • Wrap the short ends of the foil together, folding twice to seal securely; fold in the sides to create a tight seal, ensuring there is space for steam to circulate.
  • Grill the packets over medium-high heat covered for 20 to 25 minutes, or until the chicken juices run clear at the thickest part (reaching at least 165°F), flipping the chicken once. Adjust cooking time based on the size of the chicken.
  • Take the dish off the grill, uncover it, and garnish with fresh cilantro and lime wedges.
