Spicy jerk seasoning meets tangy mango salsa in these flavorful Caribbean-Mexican tacos!
Ingredients:
  • 1 tsp ground coriander
  • 1 tsp ground allspice
  • 1 tsp ground thyme
  • 1.25 gm smoked paprika
  • 1.25 gm ground cumin
  • 4.00 gm brown sugar
  • 18.20 gm olive oil
  • 4 skinless Salmon Fillets
  • 12 small tortillas, warmed
  • 8 butter lettuce leaves or green oak lettuce leaves, shredded
  • 250.00 ml finely shredded red cabbage
  • 1 carrot, peeled, cut into long matchsticks
  • 1 avocado, stoned, peeled, thinly sliced
  • 1 mango, stoned, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 1 long red chilli, finely chopped (optional)
  • 125.00 ml coriander leaves
  • 1 lime, juiced
Instructions:
  • In a large bowl, mix together coriander, allspice, thyme, paprika, cumin, sugar, and oil, then season. Add the salmon and coat it by turning it in the mixture.
  • Preheat a barbecue grill or chargrill over medium-high heat. Grill salmon for 2-3 minutes on each side for medium doneness or until cooked to your preference. Place the salmon on a plate and loosely cover with foil. Let it rest for 5 minutes before serving.
  • Grill the tortillas until lightly charred and heated through, then divide them among serving plates.
  • In a bowl, mix together ripe mango, diced onion, optional chili for a kick, fresh coriander, and a squeeze of zesty lime juice. Season to perfection.
  • Flake the salmon into large pieces. Divide lettuce, cabbage, carrot, avocado, and salmon evenly among the tortillas. Finish with a dollop of flavorful salsa.
