Jerusalem artichoke vinaigrette

Ingredients:
  • Salt & black pepper
  • 50ml extra virgin olive oil
  • 1 spring onion, chopped finely
  • 500g Jerusalem artichokes, scrubbed or peeled, sliced
  • Fresh dill, thyme or basil, to taste
Instructions:
  • Combine freshly squeezed lemon juice with a pinch of salt and a dash of pepper, slowly whisk in the oil. Mix in the chopped spring onion.
  • Coat the artichokes in the dressing and garnish with herbs.
  • Chill in the fridge for a minimum of 1 hour before serving.
