Jessica's Amazing Chocolate Mousse Pie

Decadent chocolate mousse in a chocolate pie crust topped with rich chocolate whipped cream.
Ingredients:
  • 6 ounces semisweet baking chocolate, chopped
  • 3 tablespoons butter, at room temperature
  • 3 large eggs, separated
  • 0.5 teaspoon cream of tartar
  • 0.25 cup white sugar
  • 0.5 cup cold heavy whipping cream
  • 2 tablespoons white sugar
  • 1 (9 inch) prepared chocolate cookie crumb crust
  • 1 cup heavy whipping cream
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons cocoa powder
  • 0.25 teaspoon vanilla extract
Instructions:
  • Refrigerate a spacious bowl for approximately 1 hour.
  • Gently melt chocolate and butter together in a double boiler until smooth, about 5 minutes. Remove from heat and let it cool slightly. Gradually whisk in egg yolks one by one until fully incorporated.
  • Whisk egg whites until foamy, then mix in cream of tartar. Gradually add 1/4 cup white sugar until soft peaks form. Peaks should slightly curl when lifting the whisk.
  • Whisk 1/2 cup cold heavy cream in a chilled bowl until it thickens. Incorporate 2 tablespoons white sugar and 1/2 teaspoon vanilla extract, and continue whisking until soft peaks form.
  • Carefully incorporate airy, whipped egg whites into rich chocolate mixture. Gently fold in billowy whipped cream until decadent mousse comes together. Spoon luscious chocolate mousse into pie crust and chill until serving time.
  • Whip 1 cup heavy cream, 1/3 cup white sugar, 2 tablespoons confectioners' sugar, cocoa powder, 1/4 teaspoon vanilla extract, and salt in a bowl until soft peaks form. Dollop over chocolate mousse before serving.
