Tender pork slices marinated in spicy-sweet gochujang for a flavorful Korean twist.
Ingredients:
  • 2 pounds pork shoulder or pork butt, thinly sliced
  • 1/2 small Asian pear, cut into chunks
  • 1/2 yellow onion, cut into chunks
  • 4 cloves garlic
  • 1 teaspoon minced ginger
  • 1 green onion, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoons sugar
  • 1 tablespoons rice syrup or honey
  • 2 teaspoons toasted sesame oil
  • 1/4 cup gochujang
  • Pinch of ground black pepper
  • 1/2 yellow onion, thinly sliced
  • To serve
  • Thinly sliced green onions
  • Toasted sesame seeds
  • Lettuce leaves, for wrapping
  • Perilla leaves, for wrapping
  • Cooked rice, for serving
Instructions:
  • Thinly slice the pork into bite-sized pieces that are 1/4 to 1/2 inch thick. Place the sliced pork in a zip-top bag or glass container and let it sit while you prepare the marinade.
  • Prepare the marinade by blending pear, onion, garlic, ginger, and green onion in a food processor until smooth. Add soy sauce, sugar, honey, sesame oil, gochujang, and black pepper and pulse until well mixed. Pour over pork, ensuring it is fully coated. Marinate in the fridge for 30 minutes to 2 hours.
  • Sear the pork: Heat a cast iron or Korean BBQ grill pan over medium-high heat. Cook the pork and thinly sliced onion in batches until meat is cooked through and slightly charred, about 10-12 minutes. Transfer to a platter, sprinkle with sesame seeds and green onions. Serve with lettuce or perilla leaves for wraps or over rice. Enjoy and share your feedback!
