Golden brown Southern clam fritter hush puppies: a savory fusion of two classics.
Ingredients:
  • 1.25 cups finely ground cornmeal
  • 1 (14.75 ounce) can cream-style corn
  • 1 (6.5 ounce) can minced clams, drained
  • 1 small onion, finely chopped
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon white sugar
  • 0.25 cup milk, or as needed
  • 1 quart vegetable oil for frying
Instructions:
  • Combine cornmeal, cream-style corn, clams, onion, flour, baking powder, salt, and sugar in a bowl until well mixed. Add milk, 1 tablespoon at a time, if the batter is too thick.
  • Bring the oil in a deep-fryer or large saucepan to a perfect temperature of 350 degrees F (175 degrees C).
  • Drop heaping spoonfuls of batter into the hot oil, frying 3-4 fritters at a time until golden brown, about 3-4 minutes each. Drain on paper towels.
