Cheesy spinach-stuffed manicotti topped with tomato sauce and mozzarella, baked to perfection.
Ingredients:
  • ground black pepper to taste
  • 1 (8 ounce) package manicotti pasta
  • 1 pint part-skim ricotta cheese
  • 2 eggs, beaten
  • 1 onion, chopped
  • 0.25 cup grated Romano cheese
  • 1 tablespoon chicken bouillon powder
  • 0.5 teaspoon garlic salt
  • 0.125 teaspoon dried thyme
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup shredded mozzarella cheese
Instructions:
  • Cook the manicotti pasta in a large pot of salted boiling water until it's al dente. Then, rinse with warm water and drain before using.
  • Combine ricotta cheese, eggs, onion, Romano cheese, chicken bouillon, garlic, thyme, pepper, and spinach in a large bowl.
  • Fill manicotti noodles with a delicious cheese filling, place them in a greased 9x13 inch pan, pour tomato sauce over the shells, and top with shredded Mozzarella cheese.
  • Place in a well-heated 350°F (175°C) oven for 25 minutes until golden and bubbling.
