Whip up speedy General Tso's Chicken in 30 minutes.
Ingredients:
  • 4 cups vegetable oil for frying
  • 3 eggs
  • 0.5 cup cornstarch
  • 1 pound skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 5 dried red pepper pods
  • 1.5 tablespoons rice vinegar
  • 2 tablespoons rice wine
  • 3 tablespoons white sugar
  • 3 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 3 green onions, thinly sliced
Instructions:
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • In a mixing bowl, whisk eggs until smooth. Add 1/2 cup of cornstarch and stir until batter is smooth. Mix in chicken until well coated.
  • Drop the chicken cubes into the hot oil in batches, ensuring each piece is added individually. Cook until the chicken is golden brown, about 3 minutes or when it starts to float. Place on a paper towel-lined plate to drain excess oil.
  • In a hot wok or large skillet, heat vegetable oil. Add dried peppers and stir until they brighten in color, about 30 seconds. Add chicken and cook until deep golden brown. In a small bowl, mix vinegar, rice wine, sugar, soy sauce, and 2 teaspoons of cornstarch. Pour the mixture into the wok and boil until the sauce thickens and clears, around 2 minutes. Serve garnished with green onions.
