Whip up a gourmet Joe's Special: savory scrambled eggs with spinach, beef, onions, garlic, and mushrooms. Ready in just 30 minutes!
Ingredients:
  • 2 tablespoons unsalted butter
  • 8 ounces crimini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, chopped
  • 1 teaspoon salt, divided
  • 6-ounce bag (8 cups) baby spinach
  • 1 pound (85 to 95%) lean ground beef
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 6 large eggs
  • 1 teaspoon Tabasco sauce, optional
  • Sliced sourdough bread or rolls, to serve
Instructions:
  • In a large (12-inch) skillet over medium heat, melt the butter until bubbly. Add the mushrooms in a single layer and let them brown without stirring for about 5 minutes.
  • Saute the onions, garlic, and 1/2 teaspoon of salt with the mushrooms until the onions are soft and the garlic is fragrant, about 5 minutes.
  • Sauté the spinach in the skillet with the other ingredients for a couple of minutes until it just starts to wilt. Transfer the mixture to a large, shallow serving bowl.
  • "Brown the ground beef: Over medium heat, cook the ground beef in a skillet. Season with Worcestershire sauce, pepper, nutmeg, and 1/2 teaspoon of salt. Break up the beef into crumbles as it cooks for 8 to 10 minutes until no longer pink. Transfer cooked beef to the serving bowl with the sautéed vegetables, reserving a thin layer of fat in the pan for cooking the eggs."
  • Prepare the eggs: Adjust the heat to medium-low on the stove. In a bowl, whisk together the eggs and Tabasco until combined. Transfer the eggs to the skillet and gently scramble until just slightly moist and starting to separate, stirring frequently, for about 5 minutes.
  • Combine for serving: Return the cooked beef and vegetables to the skillet, breaking the eggs into bite-sized pieces. Mix everything until well combined. Serve hot in a bowl, with a side of sourdough bread.
