Joel's Jerk Chicken Pineapple Pasta

Tropical jerk chicken pasta with sweet pineapple, creamy coconut, and a spicy kick.
Ingredients:
1tablespoonolive oil
2skinless, boneless chicken breast halves - cubed
1 (8 ounce) canpineapple tidbits with juice
0.25 cupshreddedcoconut
2tablespoons brown sugar
1teaspoonjerk seasoning mix
0.5 teaspoonground cinnamon
0.5 teaspoonchili powder
0.5 teaspooncrushedred pepper flakes
salt and ground black pepper to taste
4ounces dry fettuccini noodles
Instructions:
In a skillet over medium heat, heat olive oil. Cook and stir chicken until no longer pink and juices run clear, about 7-10 minutes. Add pineapple with juice, coconut, brown sugar, jerk seasoning, cinnamon, chili powder, red pepper flakes, salt, and pepper. Reduce heat to low and simmer for 15 minutes.
1. Boil generously salted water in a large pot. Add pasta and cook until al dente, about 8 to 10 minutes. Drain and combine with chicken mixture.
