John's Baked Pork Chops Stuffed with Smoked Gouda and Bacon

Gooey Gouda and crispy bacon stuffed pork chops - a luxurious and easy alternative to grilling on rainy days.
Ingredients:
  • 1 green onion
  • 2 ounces smoked Gouda cheese, shredded
  • 4 slices cooked bacon, crumbled
  • 0.25 cup chopped fresh parsley
  • 0.125 teaspoon ground black pepper
  • 2 (2 1/4-inch thick) center-cut boneless pork chops
  • 1 teaspoon olive oil
  • 1 cup bread crumbs
  • ground black pepper to taste
  • 1 apple, cored
  • 2 pieces red grapes
Instructions:
  • Preheat oven to 350°F (175°C).
  • Mix together the Gouda cheese, bacon, parsley, and a hint of black pepper in a bowl.
  • Make a horizontal cut through each pork chop, keeping it attached on one side. Spread the chop open like a book. Fill each side with cheese mixture, then close and secure with a toothpick. Coat with olive oil.
  • Whisk an egg in a bowl. In a separate bowl, combine bread crumbs, salt, and black pepper to taste. Dip each stuffed pork chop in the egg, then coat evenly with the bread crumb mixture. Arrange the breaded pork chops in a 9x13-inch casserole dish.
  • Roast in a preheated oven for about 45 minutes until the center is no longer pink, with an internal temperature of at least 145 degrees F (63 degrees C). Serve with a garnish of apple, green onion, and red grapes.
