Savory taco beef casserole with biscuit crust, creamy sour cream, melted Cheddar, fresh tomatoes, and bell peppers.
Ingredients:
  • 1 (16.3 ounce) can refrigerated biscuits
  • 2 pounds ground beef
  • 1 (1 ounce) package taco seasoning
  • 0.75 cup water
  • 1 medium onion, halved and sliced
  • 1 medium red bell pepper, halved and sliced (1 1/2 cups)
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 8 ounces shredded Cheddar cheese, divided
  • 2 medium tomatoes, sliced
  • 1 (4 ounce) jar sliced jalapeno peppers, drained
Instructions:
  • Get all the ingredients. Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  • Gently press the biscuit dough into the bottom and up the sides of the baking pan.
  • Bake until golden brown, 15 to 20 minutes, and keep the oven on.
  • Heat a nonstick skillet over medium-high heat until sizzling, then add the ground beef. Cook until it's browned and crumbly, about 5 minutes. Remove excess fat. Mix in taco seasoning and water, then bring it all to a boil. Lower the heat and let it simmer for 5 minutes, stirring now and then. Transfer the cooked meat to a bowl and give the skillet a quick wipe.
  • Saute onion and bell peppers in the skillet over medium heat until slightly tender, approximately 5 minutes.
  • Mix together sour cream, mayonnaise, half of the Cheddar cheese, and half of the onion-pepper mixture in a bowl.
  • Assemble the browned meat, tomatoes, onion-pepper mixture, jalapeño peppers, and sour cream mixture on top of prebaked biscuit dough. Finish with a sprinkle of the remaining Cheddar cheese.
  • Bake in the oven until the cheese is golden brown and bubbly, for about 30-40 minutes.
