Indulge in West African flavors with this tantalizing jollof rice - fragrant jasmine rice cooked in a flavorful spiced tomato and meat sauce.
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 2 tablespoons tomato paste
  • 1 teaspoon cayenne powder
  • 3 large tomatoes, diced
  • 0.75 cup water
  • 1 pound beef stew meat, cut into bite-size chunks
  • 4 cups jasmine rice
Instructions:
  • In a large pot over medium heat, warm 2 tablespoons of oil. Sauté onion, garlic, and ginger until softened, approximately 5 minutes. Add tomato paste and cayenne pepper, cook until fragrant for about 2 minutes. Mix in tomatoes, 3/4 cup water, salt, and pepper. Cover and simmer over medium-low heat.
  • As the tomato mixture simmers, warm up the remaining 1 tablespoon of oil in another pot. Season the stew meat with salt and pepper, then add it to the pot and sear until golden brown, about 1 to 2 minutes per side.
  • Combine meat with the simmering tomato mixture, then add jasmine rice and enough water to cover. Cook covered over medium heat, stirring occasionally, until meat and rice are tender, approximately 30 minutes.
