Make a delicious rice omelet with fried rice, ham, tomato, cucumber, and carrots wrapped in fluffy eggs. Perfect for breakfast or brunch!
Ingredients:
  • 1 tablespoon butter, divided
  • 0.5 cup diced cucumber
  • 0.5 cup diced carrots
  • 1 tomato, diced
  • 1 tablespoon chopped garlic
  • 1 cup cooked rice
  • 2 slices cooked ham, diced
  • 2 eggs
  • 1 pinch salt and ground black pepper
  • cooking spray
  • 0.5 teaspoon dried parsley
Instructions:
  • In a skillet over medium heat, melt half of the butter. Add cucumber, carrots, tomato, and garlic; sauté until vegetables are tender, approximately 10 minutes. Stir in rice and ham; cook until heated through and well combined, about 10 minutes. Transfer the tasty rice mixture to a serving bowl.
  • In a medium bowl, whisk together eggs, salt, and pepper until combined. In the same skillet, heat the remaining butter over medium heat. Pour the egg mixture into the skillet and swirl to evenly coat the bottom. Cook for about 2 minutes until edges are mostly set. Use a spatula to lift the omelet as the center rises, tilting the skillet to allow any uncooked eggs to run to the center. Continue cooking until fully set, about 2 to 4 minutes.
  • Top the omelet with the rice mixture, then gently fold it over using a spatula to create a cocoon shape. Transfer to a plate and add a sprinkle of parsley on top.
