Deliciously moist blueberry muffins that simply melt in your mouth.
Ingredients:
  • 0.5 cup shortening
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 1 pint blueberries
  • 2 tablespoons white sugar
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and give those 12 muffin cups a little greasy hug.
  • Combine fluffy shortening with a cup of sugar in a large bowl. Mix in eggs and vanilla. Alternately blend in flour, baking powder, salt, and milk. Gently fold in blueberries. Fill muffin cups with batter and sprinkle with sugar.
  • Preheat the oven and bake for 5 minutes. Then, lower the heat to 375°F (190°C) and bake until golden, about 30 minutes.
