Substitute white rice for wild rice, simmer for 20-30 minutes.
Ingredients:
  • 3 (10.5 ounce) cans condensed chicken broth
  • 2 cups water
  • 0.5 cup finely chopped green onions
  • 0.5 cup uncooked wild rice
  • 8 slices bacon
  • 0.5 cup margarine
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon poultry seasoning
  • 0.125 teaspoon ground black pepper
  • 2 cups half-and-half cream
  • 1.5 cups cooked, diced turkey meat
  • 2 tablespoons dry sherry
Instructions:
  • In a large pot over medium heat, combine chicken broth, water, green onions, and wild rice. Bring to a boil, then simmer uncovered for 35 to 40 minutes until the rice is tender.
  • Cook the bacon in a large skillet over medium heat until crispy. Let it cool, then crumble and set aside.
  • Once the rice is cooked to tender perfection, gently melt the margarine in a medium saucepan over medium-low heat. Add in the flour, salt, poultry seasoning, and pepper simultaneously. Keep stirring until the mixture is smooth and starts to bubble. Pour in the half-and-half and continue cooking until it thickens, which should take about two minutes. Combine the half-and-half mixture with the rice mixture. Mix in the bacon, turkey, and sherry. Heat everything thoroughly and then it's ready to be served.
