Zesty marinated shrimp mixed with lime juice, tomatoes, hot peppers, celery, and avocado. Serve as a dip with tortilla chips or a topping on a tostada with mayo. Add hot sauce for extra kick.
Ingredients:
  • 1 pound peeled and deveined medium shrimp
  • 1 cup fresh lime juice
  • 10 plum tomatoes, diced
  • 1 large yellow onion, diced
  • 1 jalapeno pepper, seeded and minced, or to taste
  • 2 avocados, diced
  • 2 ribs celery, diced
  • chopped fresh cilantro to taste
  • salt and pepper to taste
Instructions:
  • Put shrimp in a glass bowl and let them marinate in lime juice for around 10 minutes until they appear pink and opaque. In a separate large non-reactive bowl, combine plum tomatoes, onion, jalapeno, and add avocados and celery if desired.
  • Dice shrimp after removing them from the lime juice, saving the juice. Add diced shrimp to the vegetable bowl, pour in reserved lime juice marinade, and sprinkle with cilantro, salt, and pepper. Gently toss to combine.
