Puerto Rican-inspired green banana salad with sweet onion, crispy bacon, and tangy vinegar dressing. A refreshing twist on traditional potato salad loved by all. Try something different today!
Ingredients:
  • 6 small unripe (green) bananas
  • 2 tablespoons olive oil, divided
  • 1 green bell pepper, sliced into thin rings
  • 1 cup small shrimp - peeled and deveined
  • 1 cup crabmeat
  • 1 sweet onion, chopped
  • 1 pinch salt and pepper to taste
  • 1 teaspoon white sugar
  • 0.75 cup red wine vinegar
  • 2 slices crisp cooked bacon, crumbled
  • 1 hard-cooked egg, peeled and sliced
Instructions:
  • - Boil a large pot of water. Trim the ends of the bananas and slice them lengthwise. Boil the bananas until tender. Drain, cool, peel, and cut into chunks. Place in a bowl and drizzle with 1 tablespoon of olive oil before stirring to coat.
  • Heat the remaining tablespoon of oil in a skillet over medium-high heat. Cook shrimp and crab until fully cooked, about 5 minutes. Let cool before using.
  • Combine onions, green pepper, and seafood with the bananas in the bowl. In another bowl, mix red wine vinegar, sugar, and bacon pieces. Pour over bananas and toss gently to coat. Season with salt and pepper. Optionally, top with slices of hard-cooked egg for garnish.
