Elevate your tuna sandwich with this gourmet twist.
Ingredients:
185.63 gm mayonnaise
125.00 ml fresh basil leaves, torn
Zest and juice of 1lemon
20.00 ml capers, chopped
20.00 ml choppedshallot
4wholemeal rolls, split
185g can olive-oil packed tuna, drained and flaked
2hard-boiled eggs, sliced
1tomato, sliced
1Lebanese cucumber, thinly sliced
50g spinach
Instructions:
Combine the mayonnaise, basil, lemon zest, lemon juice, capers, and shallots in a small bowl. Season with salt and pepper to taste.
Place split rolls, cut side up, on a cutting board. Spread mayonnaise mixture on both halves. Divide tuna among bottom halves. Layer with egg slices, tomato, cucumber, and spinach. Cover with top halves of the rolls. Cut sandwiches in half and wrap tightly in cling film.
Prepare 4 delicious sandwiches and refrigerate them in the lunchboxes to keep them fresh and cool.
