Succulent chicken drumsticks paired with creamy risoni or orzo pasta for a delicious meal.
Ingredients:
  • 40.00 ml plain flour
  • 1.5kg chicken drumsticks
  • 54.60 gm olive oil
  • 2 onions, chopped
  • 1 large can tomato soup
  • 125ml (1/2 cup) dry sherry
  • 125.00 ml flat-leaf parsley, plus extra
Instructions:
  • Preheat the oven to 180C for a perfect bake.
  • Coat chicken drumsticks in flour and pan-fry in a large skillet with 2 tablespoons of oil over high heat until golden brown, usually around 10 minutes. Transfer to a casserole dish to keep warm.
  • Cook the onions and garlic in the same pan until they turn translucent. Then, add tomato soup, remaining oil, sherry, and parsley, and simmer for 5 minutes.
  • Place the mixture into a casserole dish, add the chicken, and bake in the oven for 1 hour.
  • Accompany the chicken with a side of buttered risoni or orzo pasta.
