Hearty Italian-style vegetable soup with potatoes, carrots, kidney beans, celery, and kale in flavorful broth.
Ingredients:
  • 2 tablespoons olive oil
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable stock
  • 1 tablespoon Italian seasoning, or more to taste
  • 1 teaspoon kosher salt
  • 0.125 teaspoon ground black pepper
  • 1 (14.5 ounce) can diced tomatoes with basil and garlic
  • 2 potatoes, diced
  • 1 (15 ounce) can kidney beans, drained
  • 1 cup bite-sized pieces kale
Instructions:
  • In a large pot over medium heat, sauté celery, carrots, onion, and garlic in olive oil until the onion is translucent, about 7-10 minutes.
  • 1. Drizzle the vegetable stock onto the flavorful vegetable medley and generously season with Italian seasoning, kosher salt, and black pepper. 2. Gently incorporate the tomatoes, potatoes, and kidney beans into the simmering stock mixture. Cook until the potatoes are fork-tender, approximately 40 minutes. 3. Introduce the kale into the pot and cook until it gently wilts, around 5 minutes.
