Indulge in a decadent Norwegian Julekake, a spiced bread filled with candied fruits and golden raisins.
Ingredients:
2 (.25 ounce) packagesactive dry yeast
0.5 cupwarm water (110 degrees F/45 degrees C)
2cups cold milk
1cupwhite sugar
1cupbutter, melted
8.5 cups all-purpose flour, divided
1cupgolden raisins
0.5 cupcandied cherries, sliced
0.5 cupchoppedcandied citron
1tablespoonground cardamom
1 large egg white, beaten
Instructions:
Activate the yeast by mixing it with warm water.
In a wide, shallow, heavy-bottomed saucepan, gently heat cold milk over medium heat, stirring occasionally until small bubbles form around the edges.
Transfer the mixture to a large bowl off the heat. Stir in sugar, melted butter, and salt; allow to rest until lukewarm, 5 to 10 minutes.
Stir in the yeast mixture followed by 4 cups of flour. Cover the dough and allow it to rise in a warm spot until it doubles in size, approximately 2 hours.
Gently deflate dough. Add raisins, cherries, citron, and cardamom. Mix in the rest of the flour until a soft dough forms. Cover and allow to rise in a warm place until doubled in size, for 2 to 3 hours.
Gently knead the dough on a lightly floured surface, then divide into fourths and shape into round loaves. Transfer the loaves to greased cookie sheets, cover, and allow to rise in a warm place until doubled in size, for about 1 to 2 hours.
Preheat your oven to 350°F (175°C), then generously brush the loaves with egg white.
Bake in the oven at the perfect temperature until beautifully golden, for about 30 to 40 minutes.
