Indulge in nostalgic pumpkin chocolate chip cookies, cake-like and delightful.
Ingredients:
  • 1 teaspoon shortening, or as needed
  • 1 (18 ounce) package yellow cake mix
  • 1 teaspoon cinnamon
  • 1 (15 ounce) can canned solid-pack pumpkin
  • 1.75 cups semisweet chocolate chips
  • 2 eggs
  • 1 tablespoon milk
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease 2 baking sheets with shortening.
  • In a bowl, combine cake mix and cinnamon, whisking to break up any lumps. Mix in pumpkin, eggs, milk, and vanilla until well combined. Stir in chocolate chips until evenly distributed in the dough.
  • Scoop rounded tablespoons of dough onto lined baking sheets, spacing them 2 inches apart.
  • Bake the cookies in the preheated oven until they turn golden brown and bounce back when gently touched. Let them cool for 2 minutes on the baking sheet before transferring them to a wire rack to cool completely.
