Slow-cooked pork tenderloin with ginger ale, curry, and maple syrup, served with rice.
Ingredients:
  • 3 tablespoons butter
  • 3 tablespoons maple syrup
  • 2 teaspoons curry powder
  • 2 teaspoons ground mustard
  • 2 cups ginger ale, divided
  • 1 pound pork tenderloin
  • 1 (16 ounce) package baby carrots
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan, gently melt butter over medium-low heat. Stir in maple syrup, curry powder, and ground mustard until well combined. Add 1/4 cup ginger ale to the mixture. Reduce heat to low and let simmer for 2 minutes.
  • Place the pork tenderloin in the slow cooker and layer the carrots on top. Pour the remaining ginger ale over the pork and carrots, then drizzle the butter syrup over everything.
  • Slow cook for 8 hours, then season with salt and black pepper.
