German-style mac and cheese: pasta with onions and Emmentaler cheese.
Ingredients:
  • 0.75 teaspoon ground nutmeg
  • 0.75 teaspoon salt
  • 0.125 teaspoon pepper
  • 3 large eggs
  • 0.375 cup 2% milk
  • 3 tablespoons butter
  • 1.5 cups shredded Emmentaler cheese
  • 1 onion, sliced
Instructions:
  • Prepare all of your ingredients.
  • Combine flour, nutmeg, salt, and pepper, sifting them together. In a medium bowl, beat eggs. Gradually mix in milk and flour mixture until smooth. Allow the mixture to rest for 30 minutes.
  • Bring a generously salted pot of water to a boil and spaetzle press the batter into the water.
  • Remove the spaetzle to a bowl once it floats to the top using a slotted spoon.
  • Stir in one cup of cheese until well combined.
  • In a large skillet over medium-high heat, melt butter until sizzling. Cook onion until golden. Add spaetzle and the remaining 1/2 cup cheese, stirring until creamy. Remove from heat and serve right away.
