Grilled Persian kabobs bursting with flavor from seasoned beef and lamb, onions, turmeric, and sumac.
Ingredients:
  • 2 onions, peeled
  • cheesecloth
  • 1 pound ground lamb
  • 1 green onion, diced
  • 2 teaspoons baking powder
  • 1 teaspoon sumac powder
  • 0.5 teaspoon ground turmeric
  • 2 eggs
  • 8 (10 inch) metal skewers
Instructions:
  • Grate onions into a fine mesh strainer and squeeze out the juices. Transfer the pulp to a cheesecloth and press out any remaining juice.
  • In a pot, combine lamb, beef, green onion, onion pulp, baking powder, salt, pepper, sumac, and turmeric. Mix in the eggs until fully incorporated. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  • Get the outdoor grill ready by heating it to medium heat and giving the grate a light coating of oil.
  • Shape the seasoned meat mixture around the skewers.
  • Grill on high heat, turning every minute, until golden brown all over and meat is cooked through, approximately 25 minutes.
