A zesty African tomato-onion salad with a kick, perfect as a salsa, appetizer, or side dish.
Ingredients:
  • 1 medium red onion, diced
  • 2 teaspoons sea salt
  • 4 medium tomatoes, diced
  • 0.5 medium cucumber, peeled and diced
  • 0.25 cup chopped cilantro
  • 1 jalapeno pepper, seeded and diced
  • 1 avocado - peeled, pitted and diced
  • 1 lime, juiced, or to taste
  • salt and freshly ground black pepper to taste
Instructions:
  • Place the onion in a medium bowl, cover with water, and stir in sea salt. Soak for 30 minutes. Drain well for 10 minutes before using.
  • Combine the drained onion, tomatoes, cucumber, cilantro, jalapeno, and avocado in a large bowl. Drizzle with lime juice to taste and season with salt and pepper.
