Delicious seafood pasta salad with shrimp, crab, eggs, and homemade dressing, perfect for potlucks.
Ingredients:
1 (16 ounce) packagespaghetti, broken into 2-inch pieces
4 hard-cooked eggs, chopped
1carrot, grated
0.5 cupfrozen petite peas, thawed
1cup frozen fully cooked salad shrimp, thawed
0.5 cupcrab meat, cooked
16ounces mayonnaise
0.25 cupmilk
1teaspoonlemon juice
1teaspoonsugar
salt to taste
black pepper to taste
paprika to taste
Instructions:
Boil salted water, cook pasta until al dente, then drain. Combine cooked pasta in a bowl with eggs, carrots, peas, shrimp, and crab meat. Chill covered in the refrigerator.
Combine creamy mayonnaise with fresh milk, zesty lemon juice, and a hint of sugar. Add a pinch of salt, a dash of pepper, and a sprinkle of fragrant paprika until perfectly seasoned.
Combine the dressing with the cold pasta, mix well. If the salad appears dry, add extra mayonnaise and a splash of milk or water as needed. Cover and refrigerate until ready to serve.
