Delicate shrimp and vibrant broccoli in a light, buttery sauce over pasta.
Ingredients:
  • 1 bunch broccoli florets
  • 1 (16 ounce) package uncooked angel hair pasta
  • 0.25 cup margarine
  • 2 tablespoons olive oil
  • 0.5 medium chopped onion
  • 2 tablespoons minced garlic
  • 1 pound small frozen shrimp, thawed
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup shredded mozzarella cheese
Instructions:
  • First, bring a pot of water to a rolling boil. Next, cook the broccoli for 5 minutes until it is just tender. Drain the broccoli and set it aside for later use.
  • Bring a pot of well-salted water to a boil, cook angel hair pasta for 4 minutes until al dente, then drain.
  • In a skillet, heat the margarine and olive oil until sizzling. Sauté the onion and garlic until soft. Add broccoli and shrimp, stirring until warmed. Combine with cooked pasta, season generously with salt and pepper, and sprinkle with cheese before serving.
