A decadent Austrian dessert: sweet rum-raisin pancake sprinkled with powdered sugar.
Ingredients:
  • 0.25 cup raisins
  • 0.25 cup rum
  • 5 eggs
  • 1 cup whole milk
  • 0.25 cup white sugar
  • salt
  • 1 cup all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon butter, melted
  • 0.25 cup confectioners' sugar, plus more for dusting
  • plum preserves for serving
Instructions:
  • Soak raisins in rum in a small bowl for 30 minutes, then drain before using.
  • In a medium bowl, whisk together eggs, milk, white sugar, vanilla, and salt until smooth. Gradually whisk in flour to create a silky batter. Gently fold in drained raisins.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Pour the batter into the skillet and cook until the pancake is set and the bottom is golden brown, about 5 to 6 minutes. Flip the pancake and cook the other side until golden brown, approximately 3 minutes.
  • Break the pancake into bite-sized pieces using a spatula or two forks. Pour melted butter and confectioners' sugar over the pieces. Turn up the heat to medium-high and toss gently until the sugar caramelizes, around 5 minutes. Dust with more confectioners' sugar and enjoy with apple sauce or plum preserves.
