Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Tender steamed kale with quinoa, bell pepper, cucumber, onion, avocado, and homemade vinaigrette make a delicious superfood salad.
Ingredients:
  • 0.66666668653488 cup quinoa
  • 1.3333333730698 cups water
  • 1 bunch kale, torn into bite-sized pieces
  • 0.5 avocado - peeled, pitted, and diced
  • 0.5 cup chopped cucumber
  • 0.33333334326744 cup chopped red bell pepper
  • 2 tablespoons chopped red onion
  • 1 tablespoon crumbled feta cheese
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • 1.5 tablespoons Dijon mustard
  • 0.75 teaspoon sea salt
Instructions:
  • In a saucepan, bring quinoa and 1 1/3 cups of water to a boil. Cover, simmer on medium-low heat until quinoa is tender and water is absorbed, approximately 15-20 minutes. Let cool.
  • Steam kale until hot by placing it in a steamer basket over boiling water with a lid on for about 45 seconds. Transfer kale to a large plate and add quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese on top.
  • Combine olive oil, lemon juice, Dijon mustard, sea salt, and black pepper in a bowl and whisk until the mixture emulsifies. Drizzle the dressing over the salad.
