Vibrant kale and quinoa salad with sweet currants, crunchy pecans, and tangy feta in a zesty vinaigrette.
Ingredients:
  • 2 cups water
  • 1 cup quinoa
  • 10 leaves kale, cut into small pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 large garlic clove, minced
  • 1 teaspoon fresh cracked black pepper
  • 0.5 teaspoon ground sea salt
  • 1 cup pecans
  • 1 cup currants
  • 0.75 cup crumbled feta cheese
Instructions:
  • 1. Boil water in a saucepan. Add quinoa and simmer covered until water is absorbed, about 12 minutes. Let sit covered for 5 minutes off the heat. Cool quinoa uncovered.
  • Place the kale in a large mixing bowl.
  • Combine olive oil, lemon juice, Dijon mustard, garlic, pepper, and salt in a bowl until a smooth dressing forms. Pour it over kale, then mix in quinoa, pecans, currants, and feta cheese until combined.
