Crispy kale chips make the perfect elegant appetizer.
Ingredients:
  • 500.00 ml besan flour
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • Pinch of chilli powder
  • Pinch of salt
  • 312.50 gm water
  • Peanut oil, for frying
  • 1 bunch kale
  • Mango chutney, to serve
Instructions:
  • In a bowl, whisk together flour, cumin, ground coriander, garam masala, turmeric, chili, and salt. Create a well in the center and pour in water. Whisk until well combined. Cover the bowl and chill in the fridge for 30 minutes.
  • Fill a wok with peanut oil until it reaches 10cm up the side. Heat the oil to 170C.
  • Cut kale leaves into 5cm pieces, making sure to discard the stems. Coat pieces in batter, removing any excess. Fry for 3 minutes or until crispy. Season with salt and serve with mango chutney.
