Kansas City Style "Burnt Ends" Philly Cheesesteak

Kansas City burnt ends BBQ meets classic Philly cheesesteak with sauteed onions, pickled peppers, and gooey cheese whiz.
Ingredients:
  • 3.5 pounds beef chuck roast (should be very well-marbled)
  • 3 tablespoons barbecue dry rub
  • 0.5 cup Kansas City style BBQ sauce
  • 4 sandwich or hoagie rolls
  • 1 (8 ounce) container cheese whiz, or sliced cheese as needed
  • 0.66 cup sautéed onions
  • 0.66 cup chopped jarred pickled peppers
  • 2 tablespoons sliced green onions
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C. Season the beef with the dry rub, then double wrap it in foil. Roast in the oven for 2 1/2 hours, seam side up, on a sheet pan or in a baking dish.
  • After resting for 1 hour, unwrap and place on a cutting board, keeping all juices. Cut into 1-inch cubes and transfer to a mixing bowl. Stir in cooking juices, extra dry rub if desired, and BBQ sauce until fully combined. Cover, refrigerate overnight for amazing flavors to develop.
  • Preheat your oven to a toasty 450 degrees F (230 degrees C). Place your beef into a shallow baking dish and generously brush it with delicious BBQ sauce.
  • Roast in the preheated oven for about 1 hour until meat starts to caramelize. Brush with more bbq sauce, then lower oven temperature to 250°F (120°C).
  • Continue roasting until the "burnt ends" reach your desired level of tenderness, approximately 1 1/2 hours longer.
  • Place the caramelized "burnt ends" on top of the rolls, then drizzle with cheese whiz, and garnish with onions, peppers, and green onions.
  • Indulge in and relish every bite!
