Indulge in a savory oxtail kare kare with a luscious peanut butter broth and vibrant vegetables like bok choy, long beans, and eggplant.
Ingredients:
  • 4.5 pounds beef oxtails
  • 3 cups water, or more as needed
  • 2 beef bouillon cubes
  • 0.5 pound bok choy, chopped
  • 0.5 pound long beans, cut into bite-sized pieces
  • 0.5 pound eggplant, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon achiote powder
  • 3 tablespoons smooth peanut butter
Instructions:
  • In a large pot, simmer oxtails in water until tender for at least 2 hours. Add more water if needed. Remove any excess fat from the top of the liquid.
  • Place the oxtails on a plate. Crush the beef bouillon cubes into the pot and mix until dissolved. Include bok choy, beans, and eggplant, and simmer until soft, for 10 to 15 minutes.
  • While the vegetables are cooking gently, warm olive oil in a large pot over medium heat. Sauté onion and garlic until soft, for about 5 minutes. Mix in achiote powder, then blend in peanut butter until smooth. Pour in half of the simmering liquid and let it simmer for 5 minutes. Add the oxtails and cook for 5 more minutes. Finally, add the rest of the broth and vegetables to the pot, stirring well to mix. Serve hot.
