Flour-dusted green tomatoes fried in butter - a crispy Southern treat without cornmeal.
Ingredients:
  • 2 large green tomatoes, sliced 1/3-inch thick
  • 2 teaspoons white sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup milk
  • 2 eggs
  • 1.25 cups all-purpose flour
  • 1 cup butter
Instructions:
  • Sprinkle sugar, salt, and pepper on each tomato slice.
  • Combine milk and eggs in a bowl and mix well. Place flour in a separate bowl.
  • Press each tomato slice into flour, delicately coating them, then shake off any extra flour. Dip the tomatoes into the egg mixture and coat them in flour once more. Place the breaded tomato slices on a plate in a single layer, without stacking, while breading the remaining slices.
  • In a large pan over medium heat, melt 1/2 cup of butter until sizzling. Add tomato slices and cook until perfectly golden brown on both sides, about 5 to 7 minutes per side, adding extra butter as needed for frying.
