Delicious fruit pizza with yellow cake crust, cream cheese, fresh fruit, and homemade glaze.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 0.25 cup vegetable oil
  • 2 (8 ounce) packages cream cheese, softened
  • 2 cups confectioners' sugar
  • 1 teaspoon almond extract
  • 0.5 cup sliced fresh strawberries, or as desired
  • 0.5 cup diced pineapple, or as desired
  • 0.5 cup sliced fresh peaches, or as desired
  • 0.5 cup orange juice
  • 0.25 cup water
  • 2 tablespoons cornstarch
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease two 12-inch pizza pans.
  • Combine cake mix, eggs, and vegetable oil in a bowl until just mixed, then evenly press the batter into the prepared pizza pans.
  • Place the crust in the preheated oven and bake until it turns a light golden brown, approximately 10 minutes. Once done, take the crust out of the oven and allow it to cool completely for at least 30 minutes before using.
  • Combine cream cheese, confectioners' sugar, and almond extract in a bowl and whisk until smooth. Spread the mixture onto the cooled crusts.
  • Layer the strawberries, pineapple, and peaches on top of the creamy cream cheese.
  • In a saucepan over medium heat, mix white sugar, orange juice, lemon juice, water, and cornstarch. Cook and stir until the glaze thickens, which should take 5 to 10 minutes. Remove from heat and chill the glaze in the refrigerator until cooled, approximately 20 minutes.
  • Pour the glaze over the fruit topping and chill the pizza in the refrigerator for a minimum of 30 minutes.
