Campfire Potato Onion Bacon Foil Packets: A must-have camping recipe.
Ingredients:
  • aluminum foil
  • 6 slices bacon, divided
  • 8 small red potatoes, or more to taste, halved
  • 1 red onion, quartered and slightly broken apart
  • 1 teaspoon red pepper flakes
  • 1 teaspoon chili powder
  • coarse salt and freshly ground black pepper to taste
Instructions:
  • Start a roaring campfire and let it burn until it's hot.
  • Overlap two 1 1/2-foot long pieces of aluminum foil in the center. Add 3 strips of bacon on top.
  • Mix together potatoes, onion, red pepper flakes, and chili powder in a bowl. Season everything well with salt and pepper. Spread the potato mixture over the bacon slices and cover with the rest of the bacon slices.
  • Create a foil packet by folding the opposite ends inward to seal all open spaces securely.
  • Place the packet directly onto the crackling campfire. Cook with occasional turns to avoid burning, until the potatoes are tender and the foil edges are charred, for 45 to 60 minutes. Open the packet with great care.
