Karioka Sweet Rice Balls

Quick and easy Filipino dessert: Karioka - deep-fried coconut rice balls.
Ingredients:
  • 1 cup rice flour
  • 1 cup shredded coconut
  • 0.75 cup coconut milk
  • 2 cups vegetable oil for frying
  • 0.5 cup coconut milk
  • 0.25 cup brown sugar
Instructions:
  • Combine rice flour, shredded coconut, and 3/4 cup coconut milk in a bowl until a well-mixed dough forms. Shape dough into 1 tablespoon-sized balls.
  • Warm up oil in a pot over medium heat.
  • Fry dough balls in hot oil until golden brown for about 5 minutes. Transfer to paper towel-lined plate after removing pot from heat.
  • In a saucepan, heat 1/2 cup of coconut milk until boiling. Stir in brown sugar until the mixture thickens, about 2 to 3 minutes. Remove from heat, let the coconut coating cool slightly, then dip balls into the mixture. Allow them to cool a bit before serving.
